Founded in the late 19th-century, El Floridita has a rich and colourful colonial history and in 1953, was listed in Esquire as one of the world’s top ten restaurants and bars. For over one hundred years it has been the best known restaurant and bar in Havana: it was where Don Constante invented the daiquiri in 1932. The very embodiment of professionalism and creativity, Floridita became the benchmark for excellence in Havana yesterday and today. In partnership with the Conran team, Floridita London opened in 2004, celebrating genuine Cuban culture, music, cigars, food and cocktails and went on to win several awards and nominations including Best New Bar 2005 in the London Club & Bar Awards. Floridita Dublin followed in 2006 and Floridita Madrid in 2007, each winning the same acclaim with its local audience.

The business

The core of the Floridita business is the sales of beverages and food. Cocktails generally dominate, representing up to 60% of total beverage sales. The food offering will be adapted based on the local market, size of venue and location. Within the current portfolio of locations this ranges from full á la carte to a simpler but premium Cuban tapas menu. In addition to this each venue has additional revenue centres – membership, cigar retail, music sales, merchandising and events. The events business is external to the location utilising the existing Cuban cultural content or delivering it specifically from Cuba for an event – typically musicians, cigar rollers and cabaret dancers. Havana Holdings will contribute:

Full franchise package inclusive of:

  • Local brand rights
  • Operational and brand manuals
  • Training and staff selection
  • Cuban content; musicians, DJ’s, cigar rollers, merchandising etc
  • FF&E negotiated supplies
  • Ongoing F&B negotiated supplies (spirits, beer, wine)

Local partner will contribute:

  • Premium location
  • Operational day-to-day management
  • Investment
  • Initial licence fee
  • Ongoing royalty
